One Heck-of-a-Weekend!

This past weekend Justin and I got to host
our very good friends Angela and Jeremy up at the Johnston Cabin.
Overall, it was a pretty good time.
Except the boys made us go fishing in artic temperatures...

...In addition to the weekend moments that I wish I could take back would be the 45 minutes of my life this stupid game sucked from me. It's one of Justin's favorite cabin games. (and for the record, I won.)

On a higher note, It's nice to have someone who likes to plan every single detail out right along with me. Ang and I were able to plan out our whole road trip which we are taking in August to Kansas City for the Twins games!

We celebrated the special day at an awesome
restaurant, Laredo's.

So with all this excitement each week (not to mention my mass amounts of grad work that continues to pile up) I have fresh vegetables growing in large quantities and I'm having a hard time keeping up with them!




The photos above are of our banana peppers, tomatoes, and green peppers.
I keep getting "antsy" and pulling the onion...plus, we still have mass amounts of zucchini growing and ready to be plucked each day! Sometime this week, if I find the time, I'm going to attempt to make two loaves of zucchini bread!
We shall see how it goes. I'm no chef/cook/baker. I already had to call my mother to ask if I'm supposed to grate the zucchini with the skin on....or off. (sheesh, I know!) In addition the recipe also calls for all dry ingredients to be, "sifted." Will it really make a difference?! If so, I need to go find one of those sifter-thingies at the local Target....they should carry them, right?!

For now, I prefer the easiest method of eating my garden fresh veggies....Grilling!
For dinner tonight, I made a heaping filled plate of yummy delight!

I don't know what we are to do when those tomatoes are ready....I counted approximately 35 on just two plants! So any ideas are welcome!

Judy is teaching me to can tomatoes if you want to come learn. Apparently I have a canner pot thing that's around here somewhere...

I think you, Kristine and I should get together and make salsa with all of our tomatoes! It would also give us a good opportunity to drink margaritas and corona! Let me know what you think...
